This is a very simple recipe, easy to prepare and wonderful to consume.

We normally accompany this with rice (I like a wild rice blend) and green beans.

  1. Heat oven to 400°F. Line baking sheet with foil; spray with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound until about 1/2-inch thick.
  2. In a small bowl mix mayo and lemon juice.
  3. Coat each breast with the mayo/lemon mixture. You want enough for the nut blend to adhere, but no so much that it overwhelms. Place the breast on your baking sheet.
  4. Sprinkle the Dukkah on the top of each breast. You can completely encrust the who;e breast, but the topping offers sufficient spicey-nutty goodness.
  5. Bake 15 to 20 minutes until juice of chicken is clear when center of thickest part is cut (165°F) and coating is golden brown. Let rest for a few minutes.
